Did you know you can freeze food up until the use by date? If not, you are not alone. But it sounds like you could use the help of the FSA Freezer Fairy. The FSA Freezer Fairy will be sharing her snow white pearls of wisdom from today to help you manage your festive foods. The campaign continues on from the Food Safety Week theme of food waste, aiming to show people how effective use of your freezer can reduce stress and waste at Christmas. LFHW will again be joining us to help spread the word and have shared some tasty leftover recipes too. Here are some of our favourite Christmas tips, courtesy of the Freezer Fairy. - Before you plan your Christmas meals, think about how many people you'll be cooking for and how big the portion sizes should be. - The freezer is like a pause button, so you can freeze pre-packaged Christmas goodies safely right up to the 'use by' date.
- You can prepare all of your veg in advance; if you don't want to spend Christmas morning peeling potatoes, you can parboil them for five minutes, then drain and cool them before freezing. You can do the same with wedges of carrot and parsnip, or even Brussels sprouts, which will need slightly less cooking time than usual.
- Cranberry sauce, bread sauce and chestnut stuffing can also be frozen in advance – you'll just need to add a splash of cream or milk to the bread sauce after reheating it.
